Carrot Cake Swiss roll



1 bag Keto candy girl carrot cake mix
1/2 cup @nutrailofficial glazed pecans, chopped
8 oz Philadelphia cream cheese, softened
6 Tbsp butter, softened
1 tsp vanilla
1/2 cup @sonourishedinc powdered sweetener

Follow instructions on bag mix. Add chopped pecans and spread batter on a parchment covered cookie sheet. Bake at 350° for 15 minutes.

WHILE STILL WARM - Sprinkle cake with some powdered sweetener. Cover cake with a tea towel or cheesecloth. Place another cookie sheet on top of cake and flip over. Gently slide towel and cake off on to counter. Roll up cake in tea towel along the short side.

Place in the fridge to chill for 30 minutes.
Beat cream cheese and butter until smooth. Add in vanilla and powder sweetener. Unroll cake and spread frosting on top. Re-roll the cake as tightly as possible. Cover with clear wrap and refrigerate for 2 hours. Slice and serve.
