Keto carrot cake cookies with buttercream
Ingredients:
1 bag of carrot cake mix from Keto Candy Girl
1 egg
1/4 cup of olive oil
1/2 teaspoon of pumpkin spice
1/2 tablespoons vanilla extract
**Mix well. I weight it out on my scale and each cookie was 40 grams so they were even size cookies to make them into sandwiches. Roll and flatten with your palm. They keep their shape but do get bigger a little. Bake at 350 for 8 to 10 minutes.
