KETO PUMPKIN SPICE CRUMB CAKE
1 package of Keto Candy Girl pumpkin spice pecan cookie mix
2 room temp eggs
1/2 cup unsalted melted butter
1/4 cup low carb milk
1/2 cup pumpkin
Preheat oven to 350°
Mix together ingredients and add to greased 4 inch pans. You should end up with 6. Bake on 350° for 25 minutes and allow to cool completely.
Cream cheese frosting (see @amandaeastsketo instagram story highlights) except reduce the whipped cream to make it a little more cream cheese forward.
The crumb is 2oz @highkeysnacks snickerdoodle cookies and 1/3 cup pecans blitzed together with a blender.
To assemble add frosting between each layer and then frost the outside and press the crumbs on!
