Mint Chocolate Chip Cheesecake!

Preheat oven to 350°
Line a 9 inch spring form pan with parchment paper.

Crust
1 bag of keto candy girl chocolate chip cookie mix.
1 egg
1 stick of butter, softened

Filling
32 oz of softened cream cheese
1 1/4 cup powdered erythritol
3 eggs
1 tbsp peppermint extract
Food coloring if desired

Mix cookie mix, softened butter & egg in a bowl. Pour cookie mix into pie pan and spread evenly with wet hands.
Bake in oven for 6 minutes.

In large bowl mix cream cheese & powdered erythritol on low until well combined. Beat in eggs, 1 at a time. Add peppermint extract & food coloring. Mix until well incorporated. Pour filling into pie pan & spread evenly. Bake for 45-55 minutes. Take out when center is almost set, will be slightly jiggly.

Allow cake to cool down & refrigerate for at least 4 hours before cutting.
