Megan used 2 ketocandygirl lemon mixes for the base of this cake and followed the
cake directions on the website. She also added about 25 drops of oooflavors lemon pound cake to the mix instead of lemon extract.
After the cake ingredients were well mixed she added 1.5C FROZEN raspberries and gently folded them into the cake mix. You do not want to over mix or your cake will turn pink and your raspberries will fall apart.

Pour mixture into a well greased bundt pan and bake at 350 for about 45-50min. Let the cake cool for about 20 min in the pan on a wire rack. Remove cake from pan and continue to let cool completely before adding the glaze.

Lemon Glaze
1.5c swervesweetie confectioners
1/4c melted SALTED butter ( salt helps cut the sugar taste)
6tbs heavy cream
Zest and juice of 1/2 a lemon
Combine all ingredients in a bowl. If it seems to thick add more cream or pop back into the microwave for 10seconds. You want to be able to pour it. Pour over cooled cake. Decorate with fresh raspberries and lemon slices.
