Keto Peanut Butter Jelly Cobbler
In a sauce pan, bring to light boil:
8oz frozen blueberries
12 oz frozen strawberries
1/4 cup powdered sweetener
1/4 cup water
1.5 tbsp lemon juice
Couple dashes of cinnamon
Once boiling turn down heat to simmer. Add 1.5 tsp xanthan gum. Let thicken + remove from heat. Let cool a bit.
While berries are cooling, preheat oven to 350°.
Mix 1 package of Keto candy girl peanut butter cookie mix. Fix as instructed, including the 2 tbsp peanut butter. Add 2 tbsp of choc zero maple or caramel syrup.
Pour berries into well greased 11×7 or 8x8 baking dish, spread evenly. Scoop cookies onto parchment paper & flatten with a fork. Gently add flattened peanut butter cookies over the top of the berries.
Bake for 30 minutes. When done, allow to cool on the counter. Serve with ice cream & enjoy!
