PEANUT BUTTER COOKIE BERRY COBBLER
In a sauce pan, bring to light boil
12 Oz frozen blueberries
10 Oz frozen strawberries
1/4 Cup powdered sweetener
1/4-1/2 Cup water
2 Tbsp lemon juice
Couple dashes of cinnamon
Once boiling turn down heat to simmer. Add 1.5 tsp xanthan gum. Let thicken + remove from heat. Let cool a bit.
While berries are cooling, preheat oven to 350°
Mix 1 package of Keto candy girl peanut butter cookie mix. Prepare as instructed, including the 2 Tbsp peanut butter plus 2 Tbsp Choczero maple or caramel syrup.
Pour berries into well greased 11×7 baking dish, spread evenly. Scoop cookies onto parchment paper & flatten with a fork. Gently add flattened peanut butter cookies over the top of the berries.
Bake for 20-30 minutes. When done, allow to cool on the counter. Serve with ice cream & enjoy!
