Keto Birthday Funfetti Cheesecake

This keto-friendly birthday funfetti cheesecake made by @ketogenicmermaid is so delicious. This recipe is so simple to make! This cheesecake has sprinkles all over the crust and on top. This cheesecake is perfect for birthdays! I mean who doesn't want a super easy, creamy, delicious cheesecake on there birthday!

Using our KetoCandyGirl Funfetti Kit for the crust for a moist crust and sprinkle overload in the crust. The cheesecake recipe is @ketogenicmermaid and is perfection. Lastly you add the whipped topping for the perfect finish, and if you want an extra finish add more sprinkles from the kit!

Here's what she did to make this keto birthday funfetti cheesecake!

Recipe and the kit!

Crust Ingredients:

Cheesecake Ingredients:

  • 8oz Softened Cream Cheese
  • 2T Heavy Whipping Cream
  • 1 Egg + 1 Yolk
  • 1/4c + 2T Sweetener of choice (she used Steviva Brands Allulose Blend)
  • 25 drops Oooflavors Cake Batter
  • 1tsp Vanilla Extract
  • Pinch of Kosher Salt

Topping Ingredients:

  • 1c Heavy Whipping Cream
  • 1tsp Vanilla
  • 2T Sweetener of choice

Here's what she did:

      1. Prepare KetoCandyGirl Funfetti Kit according to ki using 3T sprinkles and press into cheesecake pan. Stick in the refrigerator till ready to use.
      2. Cream together your cream cheese, sweetener, and heavy whipped cream. Once smooth add in your drops, extract, and salt.
      3. Now add in your eggs but don’t over mix. Pour into crust pan. Cover with paper towel and foil.
      4. Add 1.5c water to your instant pot before closing it. Cook on manual 35 minutes and 15 minutes NPR. If jiggly still at this point stick it back in for 10 minutes and 15 minutes NPR.
      5. Whip all ingredients for topping till peaks forms.
      6. Put topping on top of cheesecake and enjoy!
