Mixed Berry Cheesecake Lemon Bars
Lemon bar crust
1 stick unsalted butter
1tsp lemon extract
Mixed Berry Cheesecake
8 ounces cream cheese (softened)
1/3 cup + 2T sweetener
1/3 cup sugar free blackberry jam
1/2 cup freeze dried raspberries
1tsp vanilla extract
Preheat oven 350
Make lemon cookie mix according to package and spread thin in a lined or sprayed baking pan. Then back for 10 minutes.
Meanwhile, whip together your cream cheese & sweetener, adding in your vanilla, jam, & raspberries. Taste test for sweetness, I’ve learned to over sweeten desserts because baking dulls it down a little. Now add in your eggs and hand whisk them so your don’t over mix your eggs. Spread on top of your lemon bars & bake for 25 minutes.
