Mini Keto Lemon Cream Pies

HOW TO

INGREDIENTS

-1 stick of unsalted butter
-1 egg
keto/sugar free instant vanilla pudding as directed
1 cup of heavy cream 
1/4 cup of lemon juice
1 Tbsp worth of lemon zest
Whipped cream

-Make one batch of Keto candy girl lemon cookies as directed on the package
-While those are baking, make a batch of keto/sugar free instant vanilla pudding ( I used simply delish naturals ) Rather than nut milk, I used 1 cup of heavy cream for a thick pie filling vs. a more pudding texture)
-Add 1/4 cup of lemon juice and 1 Tbsp worth of lemon zest to the pudding and refrigerate
-When cookies are done baking let cool enough to handle. Crumble and use those cookie crumbles to form a crust in mini pie tins. It takes approximately 2 cookies for 1 pie crust (using a 4” tin)
-Pop the formed crust in the freezer for about 5 minutes. When set, fill with the pudding. I garnished my pies with whipped cream, a lemon slice, some crust crumbles and blackberries - for the perfect pairing! Enjoy!
